  1. In a large stockpot, heat oil over medium. Add onion, garlic, celery, carrots, pepper, Italian seasoning & thyme. Cook 5-7 minutes, or until vegetables are tender.
  2. Sprinkle flour over vegetables & stir continuously 2-3 minutes. Gradually pour in broth, stirring continuously until smooth & slightly thickened. Add milk & bring to a boil over high.
  3. Once boiling, add chicken & gnocchi. Cook according to gnocchi boiling package directions.
  4. Reduce heat to low. Stir in spinach. Cook 1-2 minutes, or until spinach is wilted.
