A comforting curry with sweet potatoes, red lentils, tofu, and spinach in a coconut milk sauce, flavored with Thai curry paste and lime.

  1. In a large stockpot, heat 2 Tbsp oil over medium-high. Add potatoes & cook 5-7 minutes or until browned, stirring occasionally. Transfer to plate & set aside.
  2. Add remaining oil, reduce heat to medium-low. Add onion & bell pepper. Cook 2-3 minutes or until softened, stirring occasionally. Add curry paste, garlic, ginger & jalapeño. Cook 1-2 minutes until fragrant.
  3. Add lentils, water, coconut milk & cooked potatoes to pot. Bring to a boil then reduce heat to low & simmer uncovered 30-35 minutes until lentils are tender, stirring occasionally.
  4. Add spinach & tofu. Stir & cook 1-2 minutes or until spinach is wilted.
  5. Serve topped with lime juice & cilantro.
