Crispy chicken tossed in a sweet-and-spicy orange sauce served over rice, ready in about 45 minutes.

- Preheat air fryer to 380°F. Prepare rice according to package directions. Fluff with a fork & set aside.
- In a medium bowl, add cornstarch. In a separate bowl, add eggs & whisk. In a third bowl, add breadcrumbs. To bread chicken, dip in cornstarch, then egg, then breadcrumbs, shaking off excess between steps.
- Add chicken to air fryer basket in a single layer, coat lightly with cooking spray. Cook 15-20 minutes, tossing halfway until browned & crispy.
- In a small stockpot, heat oil over medium. Add garlic & cook 3-5 minutes or until fragrant. Add ginger, juice, honey, soy sauce, vinegar & Sriracha. Whisk to combine & bring to a simmer. In a small bowl, add cornstarch & water, whisk together. Add cornstarch mix & simmer 3-5 minutes until thickened, whisking continuously.
- In a large bowl, toss chicken in sauce. Serve immediately over rice.
