This soup brings together shrimp, tilapia, fresh veggies, and a smoky tomato base into a warm, zesty bowl you’ll love digging into.

- In a medium stockpot, add water & tomatoes. Bring to a boil, cook 8-10 minutes, or until tomatoes are soft. Remove from heat, add guajillo chilies, cover & let soak 10-15 minutes, or until chilies are soft.
- In a blender, add tomatoes, chilies, chipotle peppers, onion & garlic. Add 1 cup cooking liquid & blend until smooth.
- In a large stockpot, heat oil over medium-high heat. Add carrot, zucchini, chayote & potatoes. Cook 3-5 minutes or until softened.
- Add tomato sauce, broth, oregano, & seasoning. Bring to a boil, add tilapia & shrimp, reduce heat to medium. Simmer 5-7 minutes or until vegetables are soft & fish is cooked through.
- Serve topped with lime juice.
