This sweet potato salad is easy to make and full of bright, tasty flavors with soft potatoes, crunchy nuts, and a light, tangy dressing.

- Fill a large stockpot with water, add sweet potatoes & bring to a boil. Reduce heat & cook 10-15 minutes, until potatoes are fork-tender. Drain & cool 10-15 minutes, or until room temperature.
- In a small bowl, add oil, syrup, juice, vinegar, ginger, nutmeg & pepper. Whisk to combine.
- In a large bowl, add potatoes, onions, parsley, pecans, raisins & dressing. Toss gently to combine.
- Serve immediately, or refrigerate & serve when ready to eat.
