  1. Prepare rice according to package directions. Add lime juice and 1/4 cup cilantro. Fluff with fork and set aside.
  2. In a large skillet, heat oil over medium-high. Add chicken and peppers. Sauté 5-7 minutes or until chicken is cooked through.
  3. Stir in tomatoes, beans and corn. Cook 3-4 minutes or until warm.
  4. Serve over rice. Top with yogurt and remaining cilantro.
