  1. In a large bowl, whisk together 1 Tbsp oil, and 2 Tbsp Homemade Chipotle Chili Seasoning. Add chicken and toss to combine, until chicken is evenly coated.
  2. In a large pot, heat remaining oil over medium-high. Add chicken in a single layer and cook 4-5 minutes on each side, until browned. Set aside. Cook in batches if needed to not overcrowd the pot.
  3. In the same pot, add garlic, pepper, onion, cilantro, cumin, turmeric and remaining chipotle seasoning. Cook 2-3 minutes, stirring frequently.
  4. Add tomato sauce and broth. Bring to a boil. Stir in rice, peas and carrots. Return chicken to pot, reduce heat to low, cover, and cook 30-35 minutes, until all liquid is absorbed and chicken is cooked through. Serve immediately.
