- In a large bowl, whisk together 1 Tbsp oil, and 2 Tbsp Homemade Chipotle Chili Seasoning. Add chicken and toss to combine, until chicken is evenly coated.
- In a large pot, heat remaining oil over medium-high. Add chicken in a single layer and cook 4-5 minutes on each side, until browned. Set aside. Cook in batches if needed to not overcrowd the pot.
- In the same pot, add garlic, pepper, onion, cilantro, cumin, turmeric and remaining chipotle seasoning. Cook 2-3 minutes, stirring frequently.
- Add tomato sauce and broth. Bring to a boil. Stir in rice, peas and carrots. Return chicken to pot, reduce heat to low, cover, and cook 30-35 minutes, until all liquid is absorbed and chicken is cooked through. Serve immediately.
