- Preheat oven to 350ºF. Lightly coat a medium baking dish with cooking spray.
- In a large bowl, add oats, baking powder, pumpkin pie spice and salt. Mix well.
- In another large bowl, add bananas and mash with a fork. Add milk, honey, egg and vanilla. Mix well. Add oat mixture and walnuts to banana mixture. Stir to combine.
- Pour mixture into prepared baking dish and spread evenly. Bake 25 minutes or until golden brown and center is cooked through.
- Remove from oven and cool 5 minutes. Serve topped with fresh banana.

Tips
Instead of banana, use 2 cups blueberries for a different take on this easy recipe.
