  1. Cook rice according to package directions. Set aside.
  2. In a large skillet, heat oil over medium-high. Add chicken and cook 5-7 minutes or until chicken is no longer pink in the middle
  3. Stir in remaining ingredients. Bring to a boil. Cover and cook 10-15 minutes.
  4. Divide rice evenly into bowls, top with skillet contents and serve!
