  1. In a large skillet, heat oil over medium-high. Add pork, paprika and oregano. Cook 3-5 minutes, or until browned. Transfer pork to a plate and set aside.
  2. Return skillet to medium heat. Add onion and bell pepper. Sauté 2-3 minutes, or until soft. Add garlic and tomatoes. Simmer 4-5 minutes, or until slightly thickened.
  3. Stir in rice and mix well. Add 1/2 of the broth, cover and cook 12-15 minutes, stirring occasionally.
  4. Add pork back into skillet and stir in remaining broth. Cover and simmer until rice is tender, about 15 minutes. Stir in peas and cook 2 minutes.
  5. Serve topped with fresh parsley.
