  1. Prepare rice according to package directions. Set aside.
  2. Preheat oven to 375ºF. Lightly coat square glass baking dish with cooking spray.
  3. In a large bowl, mix cooked rice, enchilada sauce, tomatoes, corn, beans, cilantro, cumin, chili powder and 1 cup cheese.
  4. Spread mixture evenly in baking dish. Top with remaining cheese. Bake 15 minutes or until bubbly and cheese has melted.
  5. Cut into squares and serve immediately.
