  1. In a medium bowl add water and slowly mix in flour. Mix well. Form eight dough balls with your hands, then smash into discs about 1 inch thick.
  2. Lightly coat a medium skillet with cooking spray and heat over medium. Add dough and cook 6-7 minutes per side until toasted on both sides. Set aside.
  3. In a large bowl, add avocados and mash with a fork. Add pepper, garlic, mayonnaise, chicken, cilantro and onion. Mix well.
  4. Cut arepas in half and serve stuffed with chicken and avocado mixture. Note: final inner texture is similar to that of a tamale.
