  1. Cook rice according to package directions. Set aside.
  2. In a large skillet, heat oil over medium-high. Add pork and onion. Cook 5 minutes each side or until pork is cooked through and juices run clear.
  3. Add vegetables to skillet and cook 4-5 minutes or until vegetables are crisp-tender.
  4. In a small bowl, add ginger and vinegar. Whisk together and pour over vegetables. Reduce heat to medium and simmer 4-5 minutes, stirring occasionally.
  5. Serve stir-fry over rice.
