- Cook orzo according to package directions. Add 1 Tbsp mint, mix well and set aside.
- In a large deep skillet heat oil over high. Add onion, paprika and oregano. Cook 1-2 minutes.
- Add shrimp and tomato paste. Cook 10 minutes or until shrimp is cooked through. Add spinach and olives. Cook 1-2 minutes or until spinach is wilted.
- Serve over orzo topped with feta and mint.
