  1. In a large pot heat oil over medium-high. Add onion and pepper. Cook 2-3 minutes or until onion is soft, stirring occasionally.
  2. Add beef and cook 5-7 minutes, or until beef is cooked through.
  3. Add broth, squash, mushrooms and orzo. Bring to a boil. Reduce heat to medium-low. Cover and cook 12-15 minutes or until squash is fork-tender.
  4. Stir in kale and dill. Cook 2-3 minutes, or until wilted.
  5. Divide into bowls and top with cheese. Serve immediately.
