- Preheat oven to 400°F. Coat a large baking dish with cooking spray. Set aside.
- In a large bowl, add cornstarch, thyme, garlic powder, nutmeg, pepper, yogurt, milk, and half the cheeses. Stir to combine. Add potatoes and toss to coat.
- Evenly spread potatoes in baking dish and top with remaining cheese.
- Cover with foil and bake 40 minutes, or until potatoes are fork-tender, uncover and bake another 10-15 minutes, or until browned.
