  1. Use a vegetable peeler to shave zucchini and squash into ribbons. Put into a large bowl.
  2. In a small bowl, combine oil, juice, pepper and garlic. Mix well.
  3. Drizzle oil mixture over vegetables. Add basil and oregano. Toss to combine.
  4. Top with cheese and serve immediately.
