- Use a vegetable peeler to shave zucchini and squash into ribbons. Put into a large bowl.
- In a small bowl, combine oil, juice, pepper and garlic. Mix well.
- Drizzle oil mixture over vegetables. Add basil and oregano. Toss to combine.
