- In a large bowl, add cumin and pumpkin pie spice. Mix well. Add chicken and onions to bowl. Toss to coat.
- In a large, deep skillet, heat oil over medium-high. Add chicken and cook 5-7 minutes or until chicken is browned, stirring throughout.
- Add tomatoes, apricots and broth. Bring to a boil. Add quinoa and reduce heat to low. Cover and simmer 20-25 minutes or until chicken is cooked through and liquid is absorbed.
- Serve topped with parsley and peanuts.
