  1. Prepare rice according to package directions. Fluff with fork and set aside.
  2. In a large deep skillet, heat oil over medium-high. Add chicken, onion and garlic. Sauté 5-7 minutes or until chicken is cooked through and onions are tender.
  3. In a measuring cup, add orange juice, honey, soy sauce and ginger. Stir until combined completely. Pour mixture into skillet, reserving a tablespoon of liquid. Reduce heat to medium and simmer 5-7 minutes or until sauce starts to thicken. Add cornstarch to measuring cup and set aside.
  4. Add stir fry mix, cashews and cornstarch mixture. Cook 5-7 minutes or until vegetables are cooked through and sauce has thickened. Serve over rice.
