  1. Cook rice according to package directions. Fluff with fork, add cilantro and set aside.
  2. In a small bowl, mix chili powder and cumin. Season both sides of chicken with spice mix.
  3. In a large skillet, heat oil over medium-high. Cook chicken 7-8 minutes per side or until cooked through.
  4. Add juice and syrup to skillet. Cook 1-2 minutes to thicken sauce, stirring constantly. Remove from heat and stir in peppers.
  5. Serve chicken over rice and spoon extra sauce over chicken.
