  1. In a large stock pot bring water to a boil.
  2. Add potatoes and boil 10 minutes or until they are fork-tender. Drain and set aside to cool.
  3. In a large bowl, add remaining ingredients. Mix well. Add potatoes and toss to combine.
  4. Cover and refrigerate at least 2 hours before serving.
