  1. In a medium bowl, whisk together oil, lime juice, honey, vinegar, pepper and 1 Tbsp sriracha to make sauce.
  2. Transfer 1/4 cup of sauce to a second bowl and add pork. Toss to evenly coat.
  3. In original bowl, toss carrots and cucumber with remaining sauce.
  4. Lightly coat a large skillet with non-stick spray and heat over medium-high. Add pork and cook 5-7 minutes per side, until browned and cooked through. Remove pork, let cool 3-5 minutes and thinly slice.
  5. In a small bowl, stir together mayonnaise and remaining 1 Tbsp sriracha. Spread onto one side of each sub roll.
  6. Build sandwiches with pork slices, carrot-cucumber mixture and cilantro garnish.
