- Sort and rinse beans to make sure there are no small stones. Bring a pot of water to a boil. Add beans and boil 10 minutes. Drain and rinse beans. Set aside.
- In a large skillet, heat oil over medium. Add pork and onions. Cook 5-7 minutes, or until browned on all sides. Set aside.
- In a large slow cooker add beans, pork and onions, garlic powder, cornstarch, oregano, cumin, jalapeño, enchilada sauce, tomatoes, chiles and broth. Cook 6 hours on HIGH, or until beans are tender.
- Top with cilantro.
