- Preheat oven to 425°F. Cover a baking sheet with foil and lightly coat with cooking spray. Set aside.
- Prepare rice according to package directions. Set aside.
- In a large bowl, add yogurt, oil, curry powder, turmeric, and pepper. Mix well. Add chicken, broccoli, and cauliflower florets. Toss to coat.
- Spread evenly onto the prepared baking sheet. Roast 25-30 minutes, until chicken is cooked through and broccoli and cauliflower are tender and browned.
- Serve over rice.
