  1. Preheat oven to 425°F. Cover a baking sheet with foil and lightly coat with cooking spray. Set aside.
  2. Prepare rice according to package directions. Set aside.
  3. In a large bowl, add yogurt, oil, curry powder, turmeric, and pepper. Mix well. Add chicken, broccoli, and cauliflower florets. Toss to coat.
  4. Spread evenly onto the prepared baking sheet. Roast 25-30 minutes, until chicken is cooked through and broccoli and cauliflower are tender and browned.
  5. Serve over rice.
