- Prepare rice according to package directions. Fluff with a fork and set aside.
- Lightly coat a large stock pot with cooking spray. Add sausage and sauté 2-3 minutes, or until browned.
- Add garlic, onion, celery, jalapeño, thyme and seasoning. Sauté 4-5 minutes, or until onion and celery softens.
- Add broth, peas and greens. Cover and cook 15 minutes, stirring occasionally.
- Serve over rice.
