  1. Coat a medium saucepan with cooking spray and heat over medium-high. Cook onion and pepper mix 5 minutes, stirring occasionally.
  2. Add broth, oregano and cayenne pepper. Bring to a boil. Reduce heat, cover and simmer 10 minutes.
  3. Add okra, rice and garlic powder. Cover and cook 5-10 minutes, until rice is tender and liquid is absorbed.
  4. Add tomatoes and mix well. Let stand 5 minutes before serving.

Okra is in-season from July thru September. During other months, buy okra in the frozen section of your local grocery store.
