- Prepare grits according to package directions. Cover and set aside.
- In a large skillet heat oil over medium-high. Add peppers and cook 3-4 minutes or until soft, stirring often.
- Add shrimp, garlic and lime. Cook 4-5 minutes or until shrimp turns pink.
- Top grits with shrimp mixture and queso fresco. Serve immediately.
