  1. Preheat oven to 425°F. Lightly coat a baking sheet with cooking spray and set aside.
  2. Steam potatoes and squash according to package directions.
  3. In a large bowl, add steamed potatoes and squash. Handle steamed veggies with care, they may be hot! Add beans, seasoning, and cheese to the bowl. Mash with a fork or potato masher until smooth.
  4. Wrap tortillas in a damp paper towel, microwave 30 seconds. Divide filling between tortillas. Spread evenly and roll tightly, placing seam-side down on baking sheet. Spray top of taquitos with cooking spray.
  5. Bake 10 minutes, flip taquitos, then bake another 5 minutes until crispy.
  6. Serve with crema for dipping.
