- Preheat oven to 350°F. Lightly coat a loaf pan with cooking spray.
- In a large bowl, add flour, cornmeal, parmesan, baking powder, and baking soda. Mix to combine.
- In a separate bowl, add eggs, milk, and oil. Whisk to combine.
- Slowly add the wet ingredients to the flour mixture, mixing continuously until combined. Add zucchini, spinach, and carrots. Mix well and combine completely.
- Pour batter into loaf pan. Bake 45 minutes, or until a toothpick inserted into the center comes out clean.
- Cool 15 minutes. Remove bread from the pan and cool completely. To serve, cut into 8 slices.
