  1. Preheat oven to 350°F. Lightly coat a loaf pan with cooking spray.
  2. In a large bowl, add flour, cornmeal, parmesan, baking powder, and baking soda. Mix to combine.
  3. In a separate bowl, add eggs, milk, and oil. Whisk to combine.
  4. Slowly add the wet ingredients to the flour mixture, mixing continuously until combined. Add zucchini, spinach, and carrots. Mix well and combine completely.
  5. Pour batter into loaf pan. Bake 45 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool 15 minutes. Remove bread from the pan and cool completely. To serve, cut into 8 slices.
