  1. In a large stockpot heat oil over medium. Add onion and pepper mix, celery, carrot and garlic. Cover and cook 10 minutes, or until vegetables are tender.
  2. Add chili powder and peppers. Cook 1-2 minutes, stirring throughout.
  3. Add tomatoes and broth. Bring to a boil.
  4. Add quinoa, beans and corn. Cover and simmer 15-20 minutes, or until quinoa is cooked, stirring occasionally.
