  1. Heat a large skillet over medium-high. Add beef and chili powder. Cook 8-10 minutes or until cooked through, crumbling meat throughout. Drain excess liquid if needed.
  2. In a large bowl, add lettuce, beans, tomatoes, corn, onions and queso fresco. Toss to combine. Top with slightly-cooled beef.
  3. In a small bowl, stir together yogurt, lime juice and cilantro to make the dressing.
  4. Just before serving, pour dressing over salad and toss to coat. Top with chips and serve.

    What can u substitute the yogurt and cilantro with or can you leave them out

      Hi Mary!

      In this recipe, we use non-fat plain Greek yogurt as a replacement for sour cream so you could try it with low-fat sour cream.

      In place of fresh cilantro, you could try 2 tsp dried cilantro. Parsley makes a good fresh substitute for cilantro. Cumin could also be used to add flavor to this recipe.
