  1. Cook rice noodles according to package directions. Set aside.
  2. In a large skillet, heat oil over medium-high. Add chicken and half of onion. Cook 5-7 minutes. Add peppers, carrots and garlic. Cook 4-5 minutes, stirring occasionally.
  3. Push chicken and vegetables to one side of skillet and add eggs on opposite side. Cook 2-3 minutes, stirring to scramble. Once scrambled, stir to combine.
  4. Add noodles, peanut sauce and water. Remove from heat and toss to coat. Top with peanuts, cilantro, remaining onion and lime juice.
