- Cook rice noodles according to package directions. Set aside.
- In a large skillet, heat oil over medium-high. Add chicken and half of onion. Cook 5-7 minutes. Add peppers, carrots and garlic. Cook 4-5 minutes, stirring occasionally.
- Push chicken and vegetables to one side of skillet and add eggs on opposite side. Cook 2-3 minutes, stirring to scramble. Once scrambled, stir to combine.
- Add noodles, peanut sauce and water. Remove from heat and toss to coat. Top with peanuts, cilantro, remaining onion and lime juice.
