  1. In a small skillet, heat oil over medium.
  2. Add onion, garlic and cumin. Sauté 3-4 minutes, or until onions are tender. Let cool slightly.
  3. Place onion mixture, beans, cilantro, lime juice, chipotle peppers, pepper, remaining oil and water in a blender.
  4. Blend until smooth. Transfer to a serving bowl.
  5. To serve, top with cilantro.
