- Prepare rice according to package directions. Fluff with a fork and set aside.
- In a large skillet, heat oil over medium-high. Add chicken and pepper. Cook 5-8 minutes, or until golden brown on all sides, stirring frequently.
- In a small bowl, whisk together broth and curry paste. Add to skillet and bring to a simmer.
- Add spinach and onions. Simmer 2-3 minutes, or until chicken is cooked through and spinach is warm.
- Serve chicken and spinach over rice.

Tips
