- In a large skillet, heat oil over medium-high. Add onions and cook 15 minutes, or until caramelized, stirring often. Remove onions and set aside.
- In a large bowl, add beef, garlic, 1/2 cup mozzarella, parmesan, breadcrumbs, parsley, half of onions and seasoning. Mix with hands until well-combined. Shape into 24 meatballs.
- Add meatballs to skillet and cook 5-7 minutes, or until browned on all sides.
- Add 1/2 cup broth. Cover and cook 8-10 minutes, or until cooked through.
- Serve meatballs on sub rolls, top with remaining mozzarella and onions.
