- In a large skillet, heat oil over medium. Add onions and cook 2-3 minutes or until tender.
- In a medium bowl, whisk together eggs and milk. Add to skillet and cook 3-4 minutes without stirring. Once edges are cooked, gently scramble eggs so that all uncooked eggs are evenly mixed in the skillet. Add beans and chiles. Cook another 2-3 minutes or until eggs are cooked through. Remove from heat.
- Add salsa and tortilla chips to skillet. Gently stir to combine. Do not over-mix.
- Serve topped with cheese and cilantro.
