  1. In a large stockpot, heat oil on medium-high. Add onion, ham, carrots, jalapeño and thyme. Cook 5-7 minutes.
  2. Add broth and bring to a boil. Add flour and whisk together until soup thickens.
  3. Add potatoes and corn. Reduce heat, cover and cook 20 minutes or until potatoes are fork-tender.
  4. Stir in milk and cheese. Cook until cheese is melted. Remove from heat and serve.
