  1. Preheat oven to 425°F.
  2. In a microwave-safe dish, add onion and pepper mix, spinach and broccoli. Microwave to defrost at 50% power 3 minutes. Drain water from vegetables. Add ham and tomato. Mix well.
  3. In a small bowl, mix eggs, 1 cup cheese and garlic powder.
  4. Spray square glass baking dish with cooking spray. Spread vegetable and ham mixture evenly in dish. Pour egg mixture over vegetables. Top with remaining cheese.
  5. Bake 20-25 minutes, or until frittata is set. To check, insert a knife in the middle. If ready, it will come out clean.
