- Preheat oven to 425°F.
- In a microwave-safe dish, add onion and pepper mix, spinach and broccoli. Microwave to defrost at 50% power 3 minutes. Drain water from vegetables. Add ham and tomato. Mix well.
- In a small bowl, mix eggs, 1 cup cheese and garlic powder.
- Spray square glass baking dish with cooking spray. Spread vegetable and ham mixture evenly in dish. Pour egg mixture over vegetables. Top with remaining cheese.
- Bake 20-25 minutes, or until frittata is set. To check, insert a knife in the middle. If ready, it will come out clean.
