- Preheat oven to 425℉. On a baking sheet, toss together shrimp, pineapple, onion, olive oil, chili powder, soy sauce and sriracha. Place in a single layer on pan and roast 6-8 minutes, or until shrimp are cooked. Turn oven to broil and broil 2-3 minutes, until pineapple is slightly browned. Remove from oven and set aside.
- In a blender, add yogurt, jalapeño, juice of 1 lime, honey and 1/4 cup cilantro. Blend until smooth.
- Toss together remaining cilantro, corn and lime juice.
- Add shrimp and pineapple onto warmed tortillas, drizzle with creamy jalapeño sauce. Top with cilantro, corn and avocado.

Tips
Substitute canned for fresh pineapple when not in season.
