  1. Preheat oven to 425℉. On a baking sheet, toss together shrimp, pineapple, onion, olive oil, chili powder, soy sauce and sriracha. Place in a single layer on pan and roast 6-8 minutes, or until shrimp are cooked. Turn oven to broil and broil 2-3 minutes, until pineapple is slightly browned. Remove from oven and set aside.
  2. In a blender, add yogurt, jalapeño, juice of 1 lime, honey and 1/4 cup cilantro. Blend until smooth.
  3. Toss together remaining cilantro, corn and lime juice.
  4. Add shrimp and pineapple onto warmed tortillas, drizzle with creamy jalapeño sauce. Top with cilantro, corn and avocado.
