  1. In a slow cooker, add beef, half of onion, garlic, bay leaf and oregano. Cover with beef broth and cook 4 hours HIGH or 8 hours LOW, until meat is tender and easily shredded with a fork.
  2. While meat is cooking, make dressing.
  3. Once tender, transfer meat to a bowl to cool. Shred beef using 2 forks.
  4. In a large bowl, gently toss shredded beef with lettuce, radishes, tomatoes, olives and remaining onion.
  5. Transfer the salad to plates and garnish with avocado, crushed chips and queso fresco. Drizzle with dressing and enjoy!
