  1. Preheat oven to 450°F.
  2. Cook rice according to package directions. Fluff with a fork and set aside.
  3. Lightly coat roasting pan with cooking spray then add chicken, peppers, tomatillos, garlic and jalapeños. Roast 30 minutes or until chicken is cooked through.
  4. Blend cilantro, lime juice, and roasted tomatillos and garlic to create tomatillo sauce.
  5. Serve shredded chicken and roasted peppers over rice topped with tomatillo sauce and yogurt.
