  1. In a large non-stick skillet heat oil over medium. Add garlic and onions. Cook 2-3 minutes. Add potatoes, asparagus and rosemary. Cook 5-7 minutes or until potatoes are browned on all sides and asparagus is crisp-tender, stirring occasionally.
  2. Meanwhile, in a large bowl, add salmon, yogurt, mustard, green onions and parsley. Mix well.
  3. When potatoes are done, remove from heat. Fold in salmon mixture until thoroughly combined. Top with cheese and serve!

    I’ve been looking for a tasty salmon hash recipe and I’ve FINALLY found one that really hits the spot! This recipe is great for a joint venture, too. My partner helped by preparing the potato portion while I worked on the veggies and salmon mixture, this way we quickly put this meal together even using some ingredients from the garden. Because we didn’t have quite enough asparagus, we added broccoli. This recipe will definitely be used again! (and again and again!)
