- Turn oven to broil on high. Cover two large baking sheets with foil and lightly coat with cooking spray. Evenly spread peppers and tomatillos on sheet. Broil 8-10 minutes, or until charred. Remove from oven. Cover with foil and set aside 5 minutes. Uncover, remove and discard charred skin from peppers and tomatillos. Dice and place in slow cooker.
- Add seasoning, broth and pineapple juice. Cover and cook on LOW 4 hours or HIGH 2 hours.
- Add shrimp and rice to slow cooker. Cover and cook on HIGH 1 hour, until shrimp is cooked through and rice is tender.
- Serve topped with lime juice as desired.
