- Turn oven to broil on high. Cover two large baking sheets with foil & lightly coat with cooking spray. Evenly spread peppers & tomatillos on sheet. Broil 8-10 minutes, or until charred. Remove from oven. Cover with foil & set aside 5 minutes. Uncover, remove & discard charred skin from peppers & tomatillos. Dice & place in slow cooker.
- Add seasoning, broth & pineapple juice. Cover & cook on LOW 4 hours or HIGH 2 hours.
- Add shrimp & rice to slow cooker. Cover & cook on HIGH 1 hour, until shrimp is cooked through & rice is tender.
- Serve topped with lime juice as desired.
