- Preheat oven to 350°F. In a large bowl, add rhubarb, strawberries, sugar, cornstarch, and vanilla. Stir to combine. Transfer to a medium baking dish.
- In a medium bowl, add oats, flour, brown sugar, salt, butter, and oil. Stir to form a crumble topping. Sprinkle topping over fruit.
- Bake for 30-40 minutes until fruit is bubbly around the edges and topping is browned. Let cool 10 minutes before serving.
