  1. In a large, deep skillet, heat over medium-high. Add beef, garlic, oregano, cumin and chili powder. Cook 4-5 minutes, crumbling meat, stirring throughout.
  2. Add onion and bell pepper mix, garlic. Sauté 3-4 minutes.
  3. Add sweet potato, tomato paste, tomatoes and beans. Mix well. Reduce heat to low, cover and simmer 20 minutes, or until potatoes are fork tender, stirring occasionally.
  4. Remove from heat and stir in cilantro.
  5. Evenly divide chili into bowls, top with cheese and serve.
