- In a large, deep skillet, heat over medium-high. Add beef, garlic, oregano, cumin and chili powder. Cook 4-5 minutes, crumbling meat, stirring throughout.
- Add onion and bell pepper mix, garlic. Sauté 3-4 minutes.
- Add sweet potato, tomato paste, tomatoes and beans. Mix well. Reduce heat to low, cover and simmer 20 minutes, or until potatoes are fork tender, stirring occasionally.
- Remove from heat and stir in cilantro.
- Evenly divide chili into bowls, top with cheese and serve.
