  1. Prepare rice according to package directions. Set aside.
  2. In a small bowl whisk together honey, vinegar, tomato paste, juice, soy sauce and cornstarch until combined. Set aside.
  3. Season pork chops with pepper. In a large skillet, heat oil over medium. Add pork chops and cook 4-5 minutes per side, or until browned. Set aside.
  4. Add vegetables and sauce to the skillet. Bring to a simmer. Continue to cook 3-4 minutes, or until sauce thickens.
  5. Add cooked pork chops back to the skillet with vegetables and sauce. Simmer pork chops in the sauce 2-3 minutes more, or until browned and cooked through. Serve with rice.
