  1. Cook rice according to package directions. Fluff with fork and set aside.
  2. In a large skillet, heat oil over medium-high. Add onion, garlic and thyme. Sauté 2-3 minutes.
  3. Add chicken and cayenne pepper. Cover and cook 5-7 minutes or until chicken is cooked through, stirring occasionally.
  4. Add tomatoes, okra, corn, bell pepper and broth. Cook 7-8 minutes or until peppers are crisp tender, stirring occasionally.
  5. Remove from heat and serve over rice.
