- Preheat oven to 400°F. Lightly coat two baking sheets with cooking spray.
- Heat medium saucepan over medium-high. Add beans and 1/3 cup enchilada sauce. Mash with a fork to desired consistency and stir until warmed through. Remove from heat and set aside.
- Evenly spread tortillas on baking sheets and lightly coat with cooking spray. Bake 10 minutes, flip, coat again and bake another 5 minutes, or until crisp.
- Spread 1/4 cup of mashed beans on each tortilla. Stack tortillas in twos. Spread two spoonfuls of enchilada sauce over each stack and top with cheese.
- Bake 5 minutes until cheese is melted. Top with cilantro, tomatoes, olives and yogurt. Slice and serve.
