  1. Preheat oven to 400°F. Lightly coat two baking sheets with cooking spray.
  2. Heat medium saucepan over medium-high. Add beans and 1/3 cup enchilada sauce. Mash with a fork to desired consistency and stir until warmed through. Remove from heat and set aside.
  3. Evenly spread tortillas on baking sheets and lightly coat with cooking spray. Bake 10 minutes, flip, coat again and bake another 5 minutes, or until crisp.
  4. Spread 1/4 cup of mashed beans on each tortilla. Stack tortillas in twos. Spread two spoonfuls of enchilada sauce over each stack and top with cheese.
  5. Bake 5 minutes until cheese is melted. Top with cilantro, tomatoes, olives and yogurt. Slice and serve.

Tips

  • Add 1/2 Tbsp Homemade Taco Seasoning to beans for a kick!
  • Use leftover ground beef for added protein!
